Ingredients:

Tex-Mex breakfast migas made of eggs scrambled with onions, red bell pepper, jalapeno, cheese, topped with cherry tomatoes, avocado and cilantro

1 tablespoon olive oil
3 cloves garlic, crushed and minced
¼ cup canned green chilies, chopped
1 cup red bell pepper, chopped
½ teaspoon salt
½ teaspoon black pepper
1 teaspoon chili powder
1 teaspoon paprika
1 teaspoon ground cumin
1 package extra-firm tofu, cubed
1 cup tomatoes, diced
1 cup fresh corn kernels
¼ cup vegetable broth or water
1 avocado, sliced
¼ cup fresh cilantro, chopped (optional)

Directions:

Place the oil in the Instant
Pot and select the sauté setting.
Once the oil is hot, add in the garlic, green chilies, red bell pepper, salt, black pepper, chili powder, paprika, and cumin.
Sauté for 5 minutes.
Add in the remaining ingredients, except for the avocado and cilantro.
Seal the cooker, and using the pressure cook option, cook on high for 4 minutes.
Use the quick release option to release the steam from the cooker. Carefully open the lid and stir.
Serve each portion garnished with avocado and fresh cilantro.
