1 cup Arborio rice
3 cups of coconut milk
2 tablespoons chia seeds
1 vanilla bean
¼ cup pure maple syrup
½ cup pecans, chopped\
Add the coconut milk to the Instant
Pot and select the sauté setting.
Heat the coconut milk, stirring occasionally, until it boils.
Add in the Arborio rice and stir.
Seal the lid of the cooker and select the pressure cook setting. Cook on high for 5 minutes.
Release the steam naturally from the cooker.
Carefully remove the lid from the cooker.
Scrape the inside of the vanilla bean into the cooker, along with the maple syrup, and stir.
Let sit for 5 minutes before serving.
Serve garnished with chopped pecans.
