Ingredients:

Root vegetable hash with apple, potato and carrots

1 tablespoon coconut oil
½ cup sweet yellow onion, diced
½ cup celery, finely diced
2 cups sweet potatoes, peeled and chopped
¼ cup vegetable broth
1 cup chopped apple
½ teaspoon salt
½ teaspoon black pepper
½ teaspoon nutmeg
1 teaspoon thyme
¼ cup chives, chopped

Add coconut oil instantly
Pot and select the sauté setting.
Once the oil is hot, add the onion and celery.
Sauté the mixture for 2 minutes before adding the sweet potatoes.
Stir and skip 3 additional minutes.
Add the vegetable stock and seal the pot.
Using the pressure cooking option, cook at high temperature for 2 minutes.
Use the quick release option to release the steam from the kitchen.
Add apples, salt, black pepper, nutmeg, and thyme.
Reseal the pot, put it back under pressure and cook for an additional 2 minutes.
Use the quick-release option to release the steam from the kitchen and carefully open the lid.
Garnish with chopped scallions before serving.
