Ingredients (makes 1 serving)

Quinoa salad with pepper, avocado , broccoli and oil . Vegan superfood

1 cup yellow lentils
150g broccoli
Handful of parsley
1 medium onion, chopped
3–5 lettuce leaves, chopped
Salt and black pepper (optional)
Lemon juice (optional)

Directions

  1. Soak the lentils for 8–9 hours.
  2. Drain well.
  3. Mix all the ingredients together in a bowl.
